Good morning, Darlings! Hope you're feeling phat and happy today. Your (hopefully) favorite Unicorn is here today with an awesome recipe we whipped up for dinner last night, which turned out to be ridiculously delicious and packed with awesome nutrition-y goodness! Recipe - 'Clean' Pico

Hello, Darlings! Just a quickie to share one of my favorite pico recipes. This is a super-quick, super-easy recipe bare-bones recipe. I think it's delicious as is, but you can always jazz it up if you want more pizzaz! It's great on salads and fresh veggies, or as a topping on proteins (beans, tempeh, or chicken or fish if you eat those).

Recipe - Fabulous Anti-Pufferizing Face & Eye Gel!

Good morning, Darlings! I woke up super-early this morning just to try out a recipe that occurred to me in the middle of the night. If you know anything about me, you'll know that Unicorns love their sleep. We are not amused when our sleep is interrupted. Think Gollum when his Precious was stolen. Yeah, it's like that.

Fortunately, especially because I have somewhere to be today wherein it's important for moi to look fabulous, the recipe that was milling around in my poor little brain is one that shall be extremely useful: It's a Fabulous Anti-Pufferizing Face & Eye Gel!

Rainy Day Chana Masala Recipe (vegan)

Hello, Darlings! Sitting indoors, stuck in the rain, or just feeling bored and uninspired? Just in the nick of time, here’s your favorite sparkly Unicorn with a great rainy-day recipe to haul you out of your doldrums by the short-and-curlies! (I'm talking about the back of your neck. Please, don't be crass, my loves...)

I’ve been feeling moody and swollen (don’t ask!), and so I hit Teh Interwebs looking for some natural solutions. Turns out turmeric, ginger, garlic, cinnamon, cayenne pepper and tomatoes are natural anti-inflammatories. Good news to me, since I already had all of that stuff on hand! I also turned up a little-known fact that oyster mushrooms (which I also had in the fridge) are one of the few sources of ergothioneine, which functions as an antioxidant and lowers systemic inflammation. It also packs a wallop of vitamin D, which is a natural anti-depressant. Again, good news! With a little protein added in, this was starting to sound like a meal…

Gazpacho Monday!

Phat Unicorn's Amazing Gazpacho! 

I’ve been wanting to make a really stellar gazpacho for a while now, but I never found a recipe that set my bells ringing. Finally, yesterday – faced with a new job and the circumstance of having to actually (gasp!) go into an office to work for the first time after years of working remotely – I decided to roll up my sleeves and jump in. I looked at several recipes before deciding to just toss them out the window and create something of my own.

This is a recipe that carries well for a refreshing, cool lunch at work. It’s also a great make-ahead easy dinner. (Bulk it up with a baked potato on the side and instant, satisfying yum! ensues!) Plus, it's chock-full of alkalizing goodness, to reduce inflammation and promote healing. Win/win!

Phat Unicorn Returns! Bonus: Carrot Apple with a Twist (juice recipe)

Hello, darlings! :) Your (hopefully) favorite sparkly unicorn is back - and with a new modus operandi. I am continuing my quest to eat more 'naturally' (some might call it 'clean), and as chemically-free as possible, with a focus on eating foods that nourish the body (and possibly help prevent diseases like cancer, diabetes and heart disease), the mind and the soul. :) If it doesn't taste great and make me feel great now AND next week, next year, next decade, then I don't want it!

I'm going to start with a juice recipe that Partner and I have been enjoying tremendously for the last several weeks. We took a week or so off from being healthful because we were MOVING TO GORGEOUS CAPE CORAL, FLORIDA (you know you're jealous!) - but now we're back on track.
